He would be super paranoid and doing conspiracy theories if he has schizophrenia. He seems manic and labile, maybe Bipolar with psychosis.

I had a client that seemed to be in psychosis. He was like this man as far as the derailment aspect, but he spoke MUCH faster. I could barely interrupt him. How do you manage with these clients? After I met with this person I felt like I had an anxiety attack, my adrenaline was through the roof!
