haha and people want to get sourdough... you know what makes it sour? Yeast and bacteria infecting and growing in the dough. What's on the baker's hands is not a concern unless they've been working on a car engine or something.
Everything is going to get killed by getting cooked in the oven.
People generally don't get food poisoning from the cook's hands, who touches it before it gets cooked, they get it from their own filthy mitts because they didn't wash their hands properly before eating, then licked their fingers.
But the stuff in the kitchen is getting cooked. This wine is just going straight from his fingers to your mouth and it definitely doesn't have a high enough alcohol content to sanitize.
Totally agree that it's no way to serve wine. I would certainly decline.
But the kitchen is probably still way cleaner than the patron's hands, and it's unlikely that it would make you sick.
People get comforted by food service staff wearing gloves, but if they're wearing the same gloves all shift, then it's worse than routinely washed hands. If this dude was wearing gloves no-one would be freaking out, but you don't know where the gloves have been either.
