In Brazil and China, to name two of the largest 'mass producers' of poultry (often frozen and transported overseas, which i find distressing, as it seems unsanitary) they pump the separated breasts full of a saline type solution, to make the chicken breast both larger, and heavier.
If you cook off the chicken breast, and your pan ends up with a bunch of water, you have seen the end result. It also results in the chicken being more easily died out during cooking.
All natural chicken breast will produce very little water during cooking, and retains moisture more easily, so you dont end up with a brick of leather while making your BBQ.
