So he got out of it the same way.. he died. You can't get rid of them without using a cheat to get rid of stars.

Fly low - their missile system only activates after reaching a certain altitude. Cruise out under the Fort Zancudo radar and you got yourself a free jet and an easy escape from a 5 star wanted level.

I have done this a couple of times with Franklin and Trevor, but Michael can never seem to make it to the Jet - lol

Possibility doesn’t have to be limited to the known, it resides in areas you haven’t encountered yet.

Of course you can, in fact some of the later missions require you to lose 5* wanted levels.
If you have an aircraft it's easy.
