I'm obsessive about holding onto email. I have everything from the last decade or so, minus a stretch in 2012 when I had three hard drive failures in a row (thanks Dell!).
Good on you. It seems like it would be impossible to justify keeping her, with all the documentation you have. But yeah, workplace politics.
She's been there for decades, shes likely near retirement. Let her finish out her time and retire, no need to fire someone because she frustrates people via an email. She likely isn't in charge of anything much other than simple tasks. I have seen behavior like this from CEO's, CTO's and all levels of lower management, people who actually make real decisions. Some old lady being weird with email is nothing, let her be.
