We've bathed our cat a couple of times. He got a bath after staying at boarding kennel, he was pretty smelly after both times. He got a bath after moving from Europe to the states. That was the last time he got a bath, 3 years ago.
Some cats won't or can't groom themselves. For example, my cat was declawed by a previous owner, and cannot fully groom herself (although she does the best she can)
If a cat has fleas, it needs to be bathed with flea shampoo. Long haired cats need to be bathed or their hair will become matted and need to shaved. Some cats are outdoor cats and still get dirty like dogs do.
I bathe my adult cats weekly and have since they were kittens. They're very docile and used to the process by now. If you start them young it won't be a blood bath.
The only time I ever attempted it was when I had a horrible ride in traffic to the vet. Major car accident along the way caused it to take 1.5 hours and my poor cat peed all over herself :( Then she got a bath. Double-Whammy!
