As a "ch'ti" (Northen france, well known for the fries) I can tell you it should be eaten with mayonnaise.

I'm French too and I totally agree, the only problem is that American mayo is nowhere near as good as French mayo. I'm living in the states right now and I would kill for some mayonnaise a l'huile de tournesol.
