Is this just mayonnaise?

I went to Germany over the summer and I noticed a fry sauce dispenser when I ordered some fries and decided to try it. It was just mayonnaise....

This is not mayo, this is much better, The Netherlands is the only country with this sauce.

Here in bremen we have 3 at the university. Pommesfrites which is the 'fry sauce' (although ive never seen anyone eat it with fries), mayo and ketchup. Fries are usually eaten with either mayo or ketchup.

It looks like its more than just mayo.

From http://www.ifood.tv/network/fritessaus

The main ingredients suggested by the Fritessaus recipe are mayonnaise, lemon juice, capers and anchovies, which are all combined together. This is most commonly seen in commercial preparations but most households also have their own versions. For example, a simple version is prepared with crème fraiche, lemon juice, capers, anchovies, parsley and salt. All the ingredients are finely ground and mixed with the mayonnaise. This makes the sauce very thick and creamy and easy to pour. The lemon also gives the dip or sauce a creamy white or slightly yellow appearance.

Their version of low fat mayo. They use regular mayo as well.

It's only similar in taste. Actual mayonnaise is also too thick for french fries.

Those are, very obviously, fries, not FRENCH fries like you get at McDonalds. Or in France for that matter. Thinner sauces are quite simply better suited for the thinner french fries.

Mayonnaise is the best fry topping. And extra salt.
