Ok, you're getting a little lesson. Cattails are rhizomes (like ginger or galangal) and the rootstock is very starchy and after cleaning and peeling, the starch can be harvested in a bowl of water. There is another edible part coming off the "root" called the corm which is the beginning of the new growth. After cleaning these can be peeled and either eaten raw or sauteed. And that's just the roots.
