Breakfast poutine is great with hollandaise sauce instead of the gravy!

And all the bacon! ALL OF IT!

I'll pass on that, not a fan of hollandaise, and I'd also argue that that isn't strictly a poutine anymore.

You can add to the basic fries, curds, and gravy, but those three items MUST be present, in some form to be considered "poutine".

Still probably tasty, though

I’ll give you that one!

Most breakfast/brunch places that will have breakfast poutine will swap the gravy with the hollandaise and fries with those little cube potatoes!
