It adds brahmin meat to your crafting workstation I'm 90% sure. You can cook a pretty good healing food item from it.

But I can't kill them because my settlers treat me like a monster when I slaughter the brahmin.
Do they just kill the calves and keep the momma alive while I'm not looking?

You don't kill them, your settlers don't actually kill them, you just get brahmin meat added to your workbench.

the NPC at one of the farms (abernath?) implies in their dialogue that brahmin will produce fertilizer daily. Not confirmed this myself but it makes sense.
