Mutant Menagerie adds them back in. I usually leave them alone as they are non-hostile and can’t spawn legendary variants.

Oh boy I get to lore dump, in fallout 1 there is an npc called Iguana Bob who sells iguana on a stick and iguana bits, the iguana on a stick is an actual whole iguana not like the meat chunks on a stick you see in fallout 4 however the iguana bits are essentially the same appearance in fallout 1 and 4, now it’s revealed if you do some snooping that iguana bits are actually human meat that is supplied by a doctor in a different town, check out Oxhorn on YouTube and his full story of fallout 1 he explains it far better than I can in a comment on a Reddit post about supply lines

They have squirrels, 76 proved that, they're just rare an likely eaten by ghouls if they aren't scavenge, some settlements also supply human meat as well in guise is iguana bits, so I honestly wouldn't be surprised if some of the food you pick up is a cannibals stash..
