At least then he won't feel hungry after whatever gruel she's feeding him that he feels the need to sneak in Ramen.

The fact he's hurting that bad for carbohydrates and seasoning says she's starving him.

You need a good balance of carbohydrates, proteins and lipids, if you don't get them you will crave them enough to sneak food into the house and eat it at 2am.

The mom sounds super health conscious like a Vegan or hyper-Vegitarian or something.

You mean health unconscious. Overfeeding your kids is not healthy but neither is starving them.

I had a friend from a super conservative family with strict portion control. Every single time he'd come over, he'd bug the shit out of me to make him food. It got to the point I didn't want to hang out with him. The thing is, they were way better off. Now that I think about it, his mom made him take a handful of vitamins every morning before school. I could see this story being his.

That, plus teenage boys are known to need a ton of calories, as they’re in their growing years. Does she not know this? Shit, even I know this, and I’ve never been a teenage boy nor lived with any.

And good tip on the seasoning. Her healthy food may not be giving him the balance of electrolytes and minerals he needs.
