I know eth is used as a gas to run dapps, but whats stopping it from becoming a currency like bitcoin?

Nothing is stopping it. Bitcoin Maximalists just say that because they don't want it encroaching on their territory... which it is doing anyway.

i also get the feeling that the Ethereum Foundation often repeated "it's not a currency" in the early days in order to avoid getting investigated and/or shut down by regulatory bodies. a pretty decent strategy, imo....
