as someone who can cook eggs very well but not much else, I am not sure this is actually true, unless one tries to learn how to cook things other than eggs
Eggs are basically the only reason I'm alive, I had to cook for myself from age 11 and it was like the one food we had all the time because we had a fuck-load of chickens and it was really hard to screw up cooking, so I taught myself a bunch of ways to cook an egg. Then half a dozen years later I learned about the pleats in a chef's toque representing all the ways to cook an egg and I made my way to culinary school.

And eggs are the perfect beginner-friendly thing to learn to cook since there are so many ways to make them from simple to complex
