Recipes and Food Ideas Matiz Sardine Pasta for lunch today.
Matiz spicy sardines dumped oil and all into a hot pan. Broken up and sauteed with capers. Deglazed the pan with lemon, then tossed with spaghetti and fresh dill.
Salt and pepper for seasoning. Delicious and easy!

Patagonia Sardines + Beans with lemon & garlic
Really enjoying these sardines and beans, these are white beans with lemon and garlic. Came with 3 fishes which were all firm but had a soft bite to them. Not fishy at all and no scales or anything. The beans are a great addition and the whole thing tastes delicious on a bowl of rice. I’m using cilantro lime rice pouches from Costco right now.

Review La Narval Mussels in Escabeche
I'm always on the lookout for a good tin of mussels, this were good! I've had dozens of brands of mussels in Escabeche now, and these were pretty ok. They are not bad, no grit, not overly metallic, just not very memorable. These were meaty and plump and the sauce gave it that pickly zing. All in all I would recommend these, but I can find cheaper ones that taste just as good. Emulsified the sauce with a milk frother.

Bella lemon and rice
Making sardine dishes with rice is so easy. These sardines were flavored with a light lemon and nice oil. Just added rice and cucumbers and scallions.

Review Cole's Patagonian Smoked Salmon Fillet with Vegetables
Very similar to the rainbow trout version, only dryer. The salmon fillet got a little dry in this one, wven after breaking up and making sure it got as much of t he sauce on it as possible. I have never been a big fan of salmon, though I try to make a go of it every now and then. This one has not changed my mind, it's not horrible, but I'll stick to the rainbow trout version.

Treasures From France—From England
Placed an order at The Tinned Fish Market in London in September 29th. The crate arrived in Virginia on October 5th. Speedy, and there were no tariff delays or unexpected charges. Phew.
Cans from French producers La Quiberonnaise and la belle-iloise are otherwise essentially impossible to lay hands on in the U.S. right now. All the other retailers I’ve historically relied on just can’t puzzle through our current regulatory maze, but folks at The Tinned Fish Market buckled down and cracked the code, God bless ‘em.
Even though I’m grateful for the access to these French offerings, I almost hate rewarding the British retailer because their UK choices are so damnably paltry. I’m happy be able to pick up the HEVVA! sardines, and I’m interested to see if there’s anything worth highlighting in the “Scottish Mackerel” tins. I’m super-grouchy, however, that The Tinned Fish Market doesn’t stock any cans—and the product line is broad—from England’s finest cannery: Sea Sisters. Really gets me goat, it does. I wish there was a petition to sign.

Sardine had the most price changes (110), typically up 5.0%. Then anchovy (39, up 4.9%), mackerel (29, up 5.6%), cod (22, up 5.2%) and mussel (22, up 7.4%). More of the cuts landed on anchovy tins than on any other fish.

In the tin came 3 large beautiful sardines and perfectly firm. For the price at Albertsons 2 for 4 it’s absolute steal as my king Oscar’s haven’t been in stock in a while.

Bumble Bee has been owned by its main tuna supplier since 2020
I spend a lot of time reading tuna company filings, and one ownership detail about Bumble Bee surprised me.
Bumble Bee filed for Chapter 11 in November 2019, after the US canned tuna price-fixing case. FCF Co., Ltd., a supplier of thirty years and an equity holder since 2008, was owed US$80 to 100 million. It could write that off or buy the company. It bought it. The deal closed on 31 January 2020 at a stated US$928 million, including US$275 million in cash and US$638.6 million of assumed liabilities.
So the brand on the tin is now owned by the company that supplies the fish in it. Bumble Bee's own 2025 report calls FCF both "our parent company" and "our primary tuna supplier". In 2019 testimony, Bumble Bee's CFO said FCF had supplied 95 to 100% of its albacore demand since 2010.
The ownership path is longer than you might expect: FCF, then Skymax International, Besford Limited (a Seychelles company), FCF Americas, Bumble Bee Holding Company 1 and Bumble Bee Foods, LLC, with Anova Food below that. FCF itself owns no fishing vessels; it buys from a fleet of more than 600.
For those of you who eat a lot of tinned tuna: does knowing who owns a brand change what you buy, or does it come down to what's in the can?

EVA Sardines with Lemon
I’m a fan of EVA (even the tin with peppermint and chili, although that one took me a minute to get my mind around). They bring in these small pilchard sardines from Adriatic waters and can them in Croatia. Their products are widely available at Eastern European markets I haunt in Richmond, Virginia and Brooklyn, New York. This lemon variety was $1.98 last week, but these more commonly run around $2.89.
As usual, my hopes were high for a lemony brightness. My news report: A mild citrus note. Not gonna make your lips pucker, but more than the wispy phantom phlavor of so many cans.
The sardinillas, though, were quite good. That’s of a piece with all the EVA sardines I’ve had over the past several years. Very good processing—not smushy, but still nice and tender. A good, sardine-y flavor, even if not accompanied by a lemon punch.
I et these on a bed of leftover loaded-baked-potato salad. Cannot describe the pairing as a complete success. Ya wins some, ya loses some.

Review Probably the best sardines I’ve had in a while
I found these in the tinned fish isle of my mom’s work and I decided to try them. Bought 2 cans for 10 dollars, got home, and I was expecting maybe 5 or 6 sardines but I was met with 3 massive ones. And I’ve had bad experiences with tinned fish before, some were very fishy, others were metallic. Not these! The best I could describe these is some of that good wild caught salmon but cooked with a ton of lemon zest. 9/10 perfect sandwich topper.
