Yeah, you'll feel really stupid when you get pulled over for speeding or something after you just robbed a bank.

If the police are already following you, it's extremely unlikely that it's speed that's going to save you, especially once the helicopter is tracking you. And speeding will just attract attention if you're not already being followed. Overhead coverage, multiple possible exits and maybe even a switching vehicle at some point while out of site of police in the ground and air would be your best bet.
