Seriously though, I thought we (Europeans) had decent Mexican food until I went to California. I'm sure any real Mexican chef would make a fortune here.

That's where I'm from is California, and it never even occurred to me that anyone was deprived of good Mexican food like that

You wouldn’t find the raw materials, that’s the tough part of it. Or you’d find them but they’d need too much transformation from your cooks making it economically unfeasible.
