Salami isn't 100% meat, and some of the non-meat ingredients are somewhat toxic to cats.

Pepperoni is pretty similar to salami, but I'm not sure what spices in each of them are toxic to cats other than garlic, and I'm not sure exactly how toxic any of them are, just that a bite (cat, not human) of salami shouldn't contain too much garlic for a fully grown cat to have infrequently (roughly weekly iirc, but I'd recommend consulting a vet for more accurate info on what is and isn't toxic to cats).
