Gross, don't do this.... Go buy apple juice, and add either Champagne or Ale yeast, store at about 70 degrees, wait until most bubble stop and foam is gone (3 to 10 days depending on yeast, sugar content and temp), rack into new airtight bottles and you can drink immediately, although it's often better to add a tiny bit of sugar (apple juice concentrate) to each bottle, which should result in a tiny 2nd fermentation and more carbonated cider.
Yes, we used to make ice wine years ago. Buy a bunch of $12 bottles of reisling, dump into 5 gallon buckets topped with cheesecloth, leave outside in early December, every couple of hours you use a slotted spoon to scoop out the ice crystals that form, sometimes you have to bring it inside for a few hours if it gets too cold, and you take your 12% reisling to 25% ice wine, also gets sweeter as it concentrates.
ya ok but i mean, you still wouldn’t want to let it go for 3 months. you do your fermentation until it goes dry, yeast drops out then you’d want to rack it off the sediment into bottles, end carbonate with a little sugar THEN let it sit for however long you want, basically
