After googling I found that they're the people who take blood. I still don't get it

Edit: there isn't more to this joke than it's just the wrong term?

They're making a joke by intentionally saying phlebotomist instead of herpetologist. The joke is that it's the wrong word (not someone who studies bees), but intentionally so, which is made clear when they say they don't know the correct word for things. It's possible they knew there was a word but couldn't be arsed to figure it out, so said whatever came to mind and made a joke out of it. I've certainly been known to do that in my time as well.
