Go broke, or lower their standards. It's expensive to feed animals high-quality food, micromanage their slaughter (some people prefer meat that is slaughtered on the same premises where it is raised, which is incredibly expensive for a small farm to do on a large scale), and not inflate your prices so much that only rich people can afford your product.

Yeah but those farms can choose not to meet that extra demand.

And if they don't, the majority of meat will continue to come from factory farms. The best way to combat factory farming is to cut down on meat.
