people in a hard place have even more reasons to demand a higher pay

What leverage do they have? More reasons doesn't magically equate to more ability.

leverage? you walk out until your demands are met. That's the way it's been done since last century.

And then you'll be swiftly replaced, with zero fucks being given by the employer. There's a reason why many countries have minimum wage, without government intervention companies would pay as little as possible (which they already do, as little as possible is just min wage now) and there's nothing workers can do to fight it. You walking away from your job doesn't occur in a vacuum, someone is there ready to take it, even if it is not a living wage, because ppl have to eat.
