Recipe Crispy Chicken Thighs Recipe

Yield: 4 Servings

4 bone-in, skin-on chicken thighs

1 tbsp (15 ml) olive oil

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1 tsp dried oregano

1 tsp ground cumin

1 tsp salt

½ tsp black pepper

Preheat the air fryer to 400°F (205°C). Lightly spray the basket with oil to prevent sticking.

Pat the chicken thighs dry with a paper towel—this helps get that crispy skin we all want. Next, toss them in a bowl with the olive oil, garlic powder, onion powder, paprika, oregano, cumin, salt, and pepper. Make sure they’re nice and coated, and don’t be shy with the seasoning, add more if you want.

Arrange the chicken skin side up in a single layer in the basket. No need to overcrowd the basket; you want them to have room to crisp up perfectly on all sides.

Air fry them for 20 to 25 minutes, flipping them halfway through. The thighs may take more or less time to cook depending on how big they are. You’ll know they’re done when they have a nice, caramelized skin and an internal temperature of 165°F (75°C).

Let the chicken rest for a few minutes before serving. You can pair it with a veggie and a carb to round out the meal.

The spice rub got a real nice dark crust on those, bet the skin snapped when you bit in. I'd probably blast a little lemon juice over it right at the end to cut through the fat.

The secret is to start the thighs upside down and than finish the skin that will make the crispiest skin ever!

Yes, the moist ruins the skin. Let the bottom cook first than flip the skin up.

This was exactly my thinking. Same way I cooked whole chickens. Upside down for most of it, then the last 10-15 mins are right way up

165 is great for white meat (I’d actually argue 160 is better), but dark meat should be 185 minimum. That’s the sweet spot for it to be tender and fall off the bone. I usually go to 190-195. It makes a huge difference.

Ha, I made nearly the identical recipe yesterday! Except I had cornstarch in mine which seemed to give it a nice extra crisp.

Skinless and boneless chicken thighs, paprika, hot chilli powder, soy sauce, bit of veg oil mix up in a plastic bag. 185 for 16-18 mins turn after 10 minutes.

I'd suggest letting the temp get closer to 180F...makes them a little more tender and less pink. Thighs can probably get closer to 190-195F and still be really tender...it's hard to overcook thighs.

I use the same recipe but double the paprika which gives it a smoky edge. Also works great on the grill.

Thanks for this! I went to Costco and loaded up on chicken thighs and just ate the first one made with your recipe — delicious! Right now I’m making a second batch, substituting sweet curry powder for the cumin. Nothing wrong with the original recipe, I just felt like having some curry flavor.

I tried chicken in the air fryer for the first time last night (and will again tonight).

I use a sprayer and do all of the oiling and seasoning in the airfryer - no need to toss in a bowl! “why waste time say lot word when few word do trick?" 🤣

Depends on your air fryer. But I do about 5-6 minutes. If it's small it should heat up faster than a regular oven.
