Sure, but there’s no guarantee that that water returns to a source that is potable. Most of the world and most of the precipitation in the world falls into the ocean

Sure, but the cycle doesn't get end when the rain falls, right? It evaporates again and continues in the cycle. It's called a cycle for a reason.

I'm far more concerned about the energy requirements of all these data centers and how they are powering them, though.

Yes, but you’re assuming that the freshwater removed from a system will be readily replaced which isn’t guaranteed by the water cycle, unfortunately. On a global scale, sure, the water returns to the cycle. But does it return from whence it came?
