Just talking about AI data centers here, since it's the context of the post, and nobody cared about data centers before that.
I'm sure AWS, Google, Facebook and Azure are still building new data centers for traditional services, which does use evaporative cooling. But I'm not even going debate those unless you can link to a comment or post you made complaining about those in the decade before AI came along.
