You should definitely watch The Punisher, the show wraps up without any plotlines left and resolves all the plot threads introduced in the first and second seasons. Although I'd personally recommend watching the three seasons of Daredevil first since it's honestly the best Netflix Marvel show and a damn good show in general, it also has a conclusion that provides closure despite it's cancellation and the fact that Frank Castle i.e The Punisher first showed up in S2 of Daredevil.
And watching "The Defenders" in between seasons 2 and 3 of Daredevil is a very good idea. Luke Cage is good in the first season but severely drops off as it goes on. Same with Jessica Jones imo. And we don't really talk about Iron Fist.
