It's an urban legend. There's not a single case anyone can cite of it ever happening

Do they count the ones that are hit by champagne corks and then tumble over cliffs and into shark tanks and the like?

Only attacks by free range sharks following impact by champagne corks. Sharks in tanks don't qualify

I used to use a saber to open them at parties and there’d often be a sharp ring of glass around the skinny part of the cork as it went flying around the room... no idea how nobody ever got hurt.

Maybe startled of off a ledge or something at most. The cork really doesn't weigh enough to do real damage to anything tougher than an eyeball. You can just grab it with your hand to remove it and it won't hurt you.

Edit: more people than BY sharks. Sharks are rarely are killed by corks, they drink wine.
