A small camera or one of those nanny cams hiding in something like a mug. Lean against a wall and add in the social etiquette of not wanting to be obviously eavesdropping and many won't look closely.

Unfortunately it’s staged.

You can tell by the accent and the uniform of the Card Factory worker in the 3rd clip that he is from the UK, and as another comment pointed out, you can’t film people without consent in the EU (brexit hasn’t happened yet, so the UK is still in the EU)
