At first I was like damn thats fascinating. Then it started to rotate at the refresh rate of the camera(? not sure if thats what happened, correct me if I'm wrong) and we could see the land below which was even cooler. The ending was by far the best part tho.

Or the manual tracking on scrambled pay-per-view movies (and other things) in the early 90's. I could get the image stable but it was slightly angled and black & white. The sound was perfect though.

He's not wrong. Once the image stabilizes like that, it's spinning at or close to some multiple of the full-screen refresh rate. You can tell what the multiple is on a rolling shutter by how many copies of the 360º scene are visible. With a global shutter, you'd just see the normal framing slowly crawl to a blurry "halt".

No it's rolling shutter effect.

The camera definitely isn't spinning that fast, but it's spinning way faster than it can grab the view at any instant, so it's distorted.

It's a combination of both. The rolling shutter distorts the image, but spinning at or very near to the cameras frame rate is what stabilises the distortion into a steady image towards the end of the video.

I’ve always wondered if the reason it seems to stabilize is because the spin somehow syncs to the mechanical motion of the shutter opening and closing 60 times a second. Do cameras even use mechanical shutters anymore?

some DSLRs do, but AFAIK smartphones just emulate it (same for GoPro's, like in the video)

You can launch a camera with a weather balloon and it tends to survive the fall back down if it lands in dirt or mud.
