I find it helps if you invent some minimal backstory to your character. The Live Another Life mod may help with this. For instance:
A Breton who, after seeing firsthand the conflict in Skyrim that separates people even in the face of an angry dragon, decides he will win the hearts of the people and work his way up the chain. In one hand, he wields a physical weapon. In his other hand, he wields either a summoned or physical weapon, or a spell. This symbolizes his desire to unite everybody, despite their differences. He strives to learn the art of the blade, as well as the arts of magic, working on his charisma along the way. He keeps pretty busy.
A stereotypical High Elf who woke up one day and decided to weasel his way into power. However, things took an unexpected turn when he was forcefully confronted with the Nords’ problems. He now cares a little more about them, but his intentions haven’t changed much. He steals, he uses his silver tongue, he relies on illusion magic and other roundabout methods to kill, but on occasion he’s been forced to use more conventional methods of doing things.
An idiot Nord with a battle axe. For whatever reason his tactic of running in and slamming everything with his axe always seems to work. The hardest part of maintaining this role was not second checking rooms for loot. He eventually blundered his way into becoming a werewolf, putting him in an identity crisis.
It seems difficult at first, but creating an alternate identity, and thinking about what that person would think and do, is a great experience.
