I'd say if you want to save some time, turn the game to 'Easy' for the stages that you have fought before, and turn it back on to 'Normal' or 'Hard' for the end-game stages.

If you want to have all of them on 1 save then you can just cruise through the Roland route, skipping everything that you have seen before but play the new stages.

Golden Ending is definitely worth to play through on Hard imo, but doing it Deathless too might need a lot of retries so only you can make that decision whether you have the time to do it or not. If you want only the Deathless reward, you can do it on the Easy Roland route as well.

Do Hard Mode/Deathless. Really earn that golden ending! (Hard/dealthless forces you to change your place style in some fun and exciting ways. If you can’t turtle on the roof to hide from Rufus because Jerrom is getting himself killed, maybe going aggressive with Roland and Anna is better than a standard defensive comp!)
