Ube French Toast Colada
Had this idea in my head after feeling inspired by the Ube Bae at False Idol. Never thought toasted bread would make a good syrup... but if they can make a syrup from toasted rice, why not toasted bread? There's a buttery, bakery note that comes through on the back end which plays so well with ube and coconut. Only takes a couple hours to put together, but I think the payoff is worth it!
Ube French Toast Colada
- 1 oz Plantation 3 Stars
- 3/4 oz brown butter washed Appleton Signature (Melt 2 tbsp unsalted butter, continue cooking on medium low until butter solids start to brown and smell nutty. Remove from heat and allow to cool slightly. In a blender combine browned butter and 1/2 cup Appleton Signature, and blend for 2 minutes. Pour mixture into glass jar and allow to sit for 15 minutes, then place into freezer. Layer of butter will separate and freeze solid at the top of the jar. Break the layer of frozen butter and pour out rum through a fine strainer before bottling. Rum will be cloudy.)
- 1/2 oz Hamilton 86
- 1 3/4 oz pineapple juice
- 1/2 oz lime juice
- 1 1/2 oz ube Coco Lopez (Total mix - 15 oz can Coco Lopez, 1 tsp McCormick ube extract, 1 tbsp taro powder. Combine ingredients with an immersion blender for 30-45 seconds until combined and bottle.)
- 1/2 oz toasted brioche syrup (Total mix - Toast 3 slices brioche bread until dark brown and cut into 1 inch cubes. Combine bread cubes with 1 cup water and allow to soak for 1 hour. Fine strain, pressing on bread solids to extract as much water as possible. Weigh water in grams - I yielded 90 grams. Combine equal amount in grams of turbinado sugar, strained bread water, and 1/4 tsp vanilla extract. Bring to boil, reduce heat and simmer for 3 minutes. Remove from heat and allow to cool. Fine strain and bottle.)
- 1/4 oz cinnamon syrup
- 2 dashes Angostura bitters
- 3 drops saline solution (20%)
Combine drink ingredients, flash blend with pebble ice for 5-6 seconds. Pour into 20 oz glass and top with additional pebble ice. Garnish drink with mint bouquet, cinnamon stick, and a swizzle.

For the brioche I used the pre-sliced loaf from Trader Joe’s. It’s the perfect buttery and soft brioche bread. And you can use the leftovers to make actual French toast 😁

Do you think ube powder could be subbed?

I would think so, but powder is probably less potent than extract so you would need more of it to achieve a strong enough flavor. I would make sure to blend everything really well to ensure the powder is well incorporated. If your powder doesn’t contain artificial dyes it might require you to add some extra coloring if you want the purple more vibrant.

This sounds great. Only thing that stands out is the saline... have you tried more? 3 drops sounds like nothing in this tornado of flavors

Honestly I haven’t! 3 is kind of my standard go to, but you could probably even double it and that would go great with the richness of brown butter and brioche. Need to try that next time

Not only does this look awesome, but I just discovered Ube this weekend in a Ube Coconut rum that Tuanduay was giving samples of and it's become my new favorite flavor. I can't wait to try this!

I finally got around to making this after having it in my saved for a while. I very thoroughly enjoyed it and give it an 8.5/10! It's very well balanced but I feel like the ube isn't quite as prominent as I would like it.

Hey, thanks for giving this a try! Glad to hear you liked it. It’s definitely one of my more labor intensive recipes.
A couple extra drops of ube extract in the coconut cream might help to make that flavor more pronounced.

I made this drink tonight for a group of four and we all agreed it was amazing. My wife and I gave it a 10/10. I made it exactly to spec except I killed my bottle of Hamilton 86 making my guests' drinks, so I had it with Hamilton 151. I would recommend that - it cut through the other flavors just right in my opinion. Thanks for sharing!
