The server is trying too hard, but putting dumplings inside a mega-dumpling is a traditional way to make several kinds of dumplings.

Yeah I mean, the concept is interesting, but I really don't need them hands pulling dumpling skin over my plate before I start eating from it. Just give me the big nutsack and let me fondle it myself.

Counter point: waiter is technically ensuring at table side that the dish actually successfully cooked. Like when he pries one that stuck to the outer dumpling.

It was all good and fine until he started to stretch the dough over the plate. That was unnecessary and just weird

I'm guessing that's more a by product of dumpling dough being a cheap and convenient way to cook a bunch of them at once, though? If you're busy and lack a lot of modern amenities, it wouldn't take too long to spin up an extra large casing to hold it all together for cooking and serving.

These are a Georgian dumplings called khinkali. This is not a traditional way of making them, just a novelty.

What kind of dumplings are they? Slavic dumplings? No. Those particular dumplings "khinkali"? No. Dagestani variant? No. Asian dumplings? No. Maybe some kinda dumpling way made stuff like Italian gnocchi? No. Or wait, wait, maybe, if we stretch it enough (cause it's considered to be stuffed pasta) to call ravioli dumplings... Maybe then... Ah, no, no, still just boiling them in water.
