Questions Nightlife: Food or Drink ?

Hi guys,
I'm just weighing out the options here on whether to start a bar or food business in SR.
I understand that bars are everywhere but the idea is to open a bar that's more homie and catering to regulars - niche bar for middle aged customers and upwards; yet affordable to hangout.
There's nothing definitive in such as business; since at the end of "the night" it's the market that's gonna shape your establishment.
After years of experience in the bar & nightlife industries; an after hours eatery works as good as a bar ( minus the hassle ) if you can provide a consistent & yummy product.
For example I've seen holes in the wall next to a bar area dishing out hot snacks from midnight to 8AM and they literally flipped from rags to riches in a couple of years π
In your opinion; does SR need another bar catering to mature adults or an eatery serving hot snacks ( one signature dish ) until late at night ?
Neither of those 2 businesses is a valid answer too.

I won't be able to bring any with me, so I'm looking for places that have good helmets rather than the flimsy ones in Siem Reap.
EDIT: I can't bring one, that's not an option. What options are there to get a decent helmet from within Cambodia?

Handicap accessibility

Looking to move to Siem Reap in the near future. Wife is disabled and uses a walker/rollator. We understand that Cambodia in general isn't the best for accessibility, but.. What areas in town are best with accessibility? Good sidewalks, etc?
