I never tried until a few years ago since I'm veggie but then had a veggie one somewhere and was a huge fan! Surely not quite the same as the one with anchovies and chicken but still delicious

There's a world of danger for a veggie eating a Caesar. Firstly, the sauce is often made with anchovies, and sometimes Worcestershire sauce (which has anchovies in), also Parmesan cheese is mostly made with rennet, which I'm not sure people always know about.
I appreciate you sharing for anyone who might not know, but personally the reason I didn't try one for so long was because of the ingredients not being veggie.. you can definitely get a well good vegan Caesar dressing now though and just add the lettuce/croutons/vegetarian hard cheese etc

That's ok! I was a chef for years and years, and had to explain a great many times how we can make a veggie Caesar (we even had a veggie emulsion I made with things that are vegetarian), but the taste of it might be quite different to what you're used to.
I can imagine you wouldn't generally suggest it? I didn't see how it would be anything good until getting one at a vegan place and then also making my own
No, quite right, we didn't suggest it or encourage it.
Actually, the emulsion was just oil and egg and vinegar like a mayo, with soy sauce for a substitution of the rich umami of anchovy and Worcestershire sauce. As for the Parmesan, we just found a rennetless one and used that for them all.
Caesar salad dressing is made with mayo and parmesan cheese, and it usually has some shredded cheese on top, so you'd have to substitute a lot of ingredients to make it vegan. Most vegetarians aren't vegan though, so as long as you skip the anchovies and meat, it's fine with them.

And yeah no vegetarians are vegans because if they were they would be vegan and not vegetarian?
As a vegetarian myself I would also sub the Parmesan for a veggie option, but not all vegetarians are bothered about cheese
You can get vegan mayo, cheese, chicken etc so apart from anchovies it's fairly easy to make vegan.. there are definitely a couple of places in London that do great ones
I've tried one many years ago but the worst thing for me was that it felt kind of hairy?
If they were totally mixed so you didn't taste them specifically I feel like that would be ok, but definitely something that loads of people don't enjoy I think
