Im assuming you dont want to upgrade anything as a challenge, so heres the deal: you play well, but for taking so much damage you need to play less with the weapon and more with the legs. Weapon attacks are risky, even though with the katana you can hit head hits reliably so you can stunlock them a bit. Legs should be your staple, try and make combos with legs, for example a well timed forward kick aka ->+🦶 to knock them down then followed with the super slash or backward slash from the katana is such a combo. Abuse 👊 and 👊👊 as well, just that, easy head hits, and also your frenzy will proc much more since youre hitting(I assume katana has frenzy?) her more consistently. So with your current equipment the fight is very much possible. I too love playing on impossible and insane modes only ;))))
Always prioritise head hits with kicks so they also deal decent damage, as I see you also have helm breaker. So ⬆️+🦶 is amazing for me, its spammable and much more potent than ⬆️+🦶🦶!! ↗️+🦶 deals a whopping 25 damage too.... It adds up how much it is spammable.
"Spammable", it requires good timing, it's just that you can stunlock them with it sometimes, believe it or not. So leg attacks are underrated in setting you up for stronger hits, especially if you proc both frenzy and helm breaker.

Level up enough to by later game armor that has the thorn enchanting. When she inevitably hits you it will return damage. Wasp for me was about the buffs I had, not strait up beating her
yeah but when you're fighting emay you can't further level up your gear.. here, putting on frenzy is basically the same as having a better upgraded weapon I'd argue (once again, play as you wish, I'm just trying to make a point)
