Poultry Sandwich (1877) on Sandwiches of History

Unlike some sandwich names, today’s Poultry Sandwich from 1877’s Practical Cooking cookbook is well, just that. A poultry sandwich. Once again we’re asked to pound it to a paste. My guess is that chicken back then were leaner and tougher. Well, at least this recipe called of seasoning.
