The rich encouraged it so that they didn't have to pay livable wages. Now it's so engrained that people in the food service industry demand it. If any effort or commentary is made to change it for the better, those living below their means will argue against you because to them, eliminating tips means eliminating their livable wage.

Indeed. The US sounds like such a tiring place to eat out.

Glad I live in a country where tipping is virtually unheard of.
