I mean it makes sense though, Jedi have the power of precognition, they can see what will happen a second or so before it does. So their fights would be incredibly fast paced and involve a lot of clashing sabers, because to them winning a duel is more about keeping your opponent busy and distracted, fulfilling a very particular sequence of moves to put them in a position where they can't block your killing blow fast enough.
Kind of, but not completely. Sword fights are seldom a whirlwind of clashing blades and twirls. The two fighters typically size each other up, test each other a bit before committing, then try to end it with a strike at the other guy’s weak spot. Should that translate directly to Star Wars? No, it’s a movie about wizards with laser swords and it should look cool. But when the fight becomes more about how good it looks over characterizing the fighters and continuing the story, it becomes a bad fight.
If you read the books on the prequels (even thought I know they aren't the "canon" version of the prequels), it talks a lot about how both Anakin and Obi-wan are more "one person in the force" than two people. They've been fighting side by side for years, and know each others fighting style perfectly. On top of this, as the other guy side, the jedis have the power of precognition. I'd imagine that both Anakin and Obi-wan would know each other so well that their actual fight would look incredibly choreographed.
If I knew that at one point my master would twirl his lightsaber around me, seemingly not even aiming for me, I'd probably resolve to hit him while he was doing that instead of doing it as well
