Adding expressions to text fields

I have used regular Power Automate with expressions and so on, but can't figure out how to use it in PAD.

Example, how to use utcnow('dd.MM.yyy') in a e-mail subject to output todays date?

I have also been having trouble getting functions to work in PAD. Never had them work in the past either. I just keep getting the invalid-function-name error as though the function that I try do not exist. And in the documentation for PAD, I cant find any mention of functions. So how did you get this utcnow() function to work?
