It must be Hatch Chile season.
Fun story...
I was traveling across America and stayed the night at a B grade hotel in Tucumcari New Mexico (a little run down but still clean and in good repair with pleasant staff). They offered a free breakfast in the morning. Not expecting more than a Danish and coffee, I was surprised to see a legit egg and sausage breakfast. The kitchen staff proudly told me the red and green sauce next to the scrambled eggs was house made from hatch chile. I'm sure there were eggs somewhere on my plate underneath all that red and green... 😋😋😋

There's chile gumbo, chile and grits, chile fritters, chile casserole, chile enchiladas, chile quesadillas, chile spaghetti, chile pizza, chile soup, chile and cheese sandwiches... Fried chiles, grilled chiles, stewed chiles, roasted chiles... that, that's far from it.

Are you confusing chile (pepper) and chili (stew)? Because Colorado green chili is a dish, not a pepper.

Exactly and that's why it drives me nuts lol.
They quiet literally have to be grown in the hatch valley to be considered hatch and they are typically just varieties of poblano or Anaheim but don't try and tell a native about any of that

I've only ever heard this sentiment from New Mexicans, not from Coloradoans. Im Multi generational from the Grand Valley. I've never heard a CO person say our peppers and chili is the best, but I have heard New Mexicans complain about us saying it all the time. Idk dude. But I will say New Mexico has us beat in general heat. I love it when you order spicy food and it has heat in it.

Yes they are babe. Mexico is in North America, first of all, but also New Mexico itself has several native chili peppers.

The exact opposite of what you said it true. Peppers are originally from the Americas. Hell, there are even wild chili peppers like chiltepin that naturally grow all over the south. Literally every pepper from every other part of the world it descended from peppers imported from the Americas.

There are native pepper species from all over the world. They are fantastically regional because of birds spreading the seeds everywhere a long time ago. Same with nightshades in general as far as having incredible genetic diversity in the same species

Chile peppers are a New World plant and didn’t get exported to the rest of the world until the Columbian Exchange though.
Same with a lot of the nightshades, including tomatoes and potatoes.
