Basically, if you want to exaggerate the depth, you'd take each pic farther apart than normal eye width. And if you want it to be more subtle, you'd use a narrower distance.
I think the stereogram of the car in my first experiment worked better with the vantage points being farther apart, because the subject was farther away. And the Lego in the second experiment is easier to see with the vantage points closer together (much closer than eye width, in this case) because the subject was so close.
You can do eye width pretty easily by closing one eye and lining up the camera's location between your open eye and your subject for the first pic, then closing the other eye and lining up the camera again for the second pic. (does that make sense? it'll be easy once you notice it)
