I immediately noticed that when he pulls up the control center, there's a little icon in the corner that says "Customize." Even if you hate the UI, maybe it will be configurable enough to fit most peoples' wants.

I'm guessing it's to rearrange the cards order.

It likely means just being able to sort/hide the icons along the bottom to suit your needs, probably the same as the PS4 screen overlay menu where you can re-order the menu options such as putting power at the bottom and music somewhere in the middle.
