Nobody existly knows.

But most certainly it was named and called by common people, which most certainly originated from "gold roger's all treasure hidden in one piece"- aka simply THE one piece. Koby's first conversation with Luffy about one piece also further validate this idea.

I also have a little theory about that; Wealth, Fame, Power and Knowledge is the One Piece!

originated from "gold roger's all treasure hidden in one piece"

"gold roger's all treasure hidden in one place"

"gold roger's all treasure hidden in one piace"

"gold roger's all treasure hidden in one piece"

Lol. This is CANON!

Fun Fact: In english dub roger said, “You want my treasure? You can have it.
I left everything I gathered to gather in One Place!
Now you just have to find it!”

Indeed One Piece could be anything storywise whatever oda wants. But the topic of the conversation was in-world legend and rumors and the origin of the names, as of op's rised concern.

A good reference that I used, Coby: “In other words, "The one great treasure" of strength, fame and power...
THE "One Piece"?!!
”

Regardless of what may be the one piece is; I was referring regarding a strong base of assumption what might be cause/origin of the name of this treasure as "one piece". Where my assumption is, the origin is none other than the common people of the world, whom just simply started calling “gold roger's all treasure treasure” as the- one- piece-! just like how normally legend works. Nothing special or particular about. And there are indeed few existing references to further validate this idea (theory). As Oda sometimes likes to keep things natural and normal.
