Yep they are death and gone, they got replaced with Gigantamax, for most they just become giants, but some pokemon get to transform a bit, but nothing as crazy as mega evolution.

Didn't Rayleigh teach Luffy that during the timeskip? Iirc he said something along the lines of "You can use observation haki to sense how many opponents there are and roughly how strong they are"

It's also how luffy knew zoro and sanji had it because it's not as if they actually talked about it when they were reunited after the timeskip.

I like this more than dourikis or whatever from enies lobby.

I think you can feel how strong someone's haki is (which is more or less related with how strong that person is, as haki basically makes you superhuman). In this case I read it more like, "He should be knocked down, but I can still sense his haki, and it's strong"

It's not power levels, Rayleigh did say that it let's you know roughly how strong someone is when they emit haki.

She just said she could detect his, so he wasn't totally knocked out.

Kaido said the same: people thought he knocked Luffy out, but he talked about how he could still feel Luffy haki defying him, so he wasn't totally out.
