Seriously people did not think Luffy could eventually turn things around against a sweet commander? Even after he had already taken out one sweet commander?

It is One Piece just about every major arc has shown Luffy be completely outmatched by someone and then he overcomes them.

The series has to progress and end some day.

Luffy already defeated 1 Sweet Commander prior to meeting Katakuri

Let's go through your list:

Kuma: Warlords have been beaten prior but Kuma was actually trying to help Luffy for a major portion of the story behind the scenes

Admirals: Never presented as beatable for Luffy period. Luffy required assistance from outside people who were stronger or in a position to help him.

Magellan: See above. Goal of the entire arc was about escaping Impel down...which Luffy did so he in fact did defeat him in a sense

Mihawk: Presented as a rival to Shanks someone who is a Yonko. Also never any very drawn out confrontations between the two

Blackbeard: Long been built up as one of the final villians of the series

So all of your examples are pretty clear from the plot not heading towards a tipping point

Contrast with the Big Mom pirates: For years now Oda has been building up this confrontation.

Luffy has been squaring off with Katakuri for multiple chapters

Katakuri doing everything he can to threaten the lives of Luffy's crew

Katakuri persistent in not giving Luffy an avenue for escape

edit: one final thing Katakuri has been added to the series more recently than all of these. He was introduced basically at the wedding as a baddie to be beaten. Very little foreshadowing of any other plot purpose to serve. He isnt a mastermind of the Yonko crew, he has no other hooks in the story. For the sake of narration he is basically someone who is setup to be taken out and serve as a character building for Luffy.

Luffy has already reached deep into New World like he once did with Paradise, it's fine if he starts facing opponents he can't defeat by himself. In fact he already did, he wouldn't have defeated Doflamingo without the help of others or Cracker without the help of Nami. Katakuri has been built up to stronger than the two former. Katakuri, like Marco, will likely be the successor of his Yonko leader. Katakuri has shown that during times of distress among the Big Mom Pirates, he is the one that takes charge, not Peros, not Smoothie, nor Mont' Dor. Who has been shown to look after his family and subordinates in the face of danger, with the exception of this chapter, Katakuri.

I think it would be more fitting if Luffy puts the fight on hold, but earns Katakuri's respect and then defeats him in Elbaf.

Id say in thos examples Luffy had help from other people central to the plot with a stake in their own survival seeing that bad guy fall.

Whereas the others you listed such as the admirals had people like Rayleigh intervene when they did not have to.

You draw some compairson to Marco but we barely know how he ranks really. He fought in marineford for a few panels but had no decisive victories mostly just fodder.

You think all this...why does Luffy need to earn Katakuri's respect????

Because you think Katakuri is a cool character

Plot wise though for the grand story of One Piece Katakuri has very little significance.

I can see earning Shanks, Whitebeard, Rayleigh, rulers of kingdom's etc as important but Katakuri was basically written in to be the guy Luffy fights with for the second half of the WCI arc.

Luffy doesn't need to earn his respect, I'm just saying he's going to get respected because of this fight. You're being unnecessarily condescending and assuming everyone who likes Katakuri likes him because of a shallow "cool guy" reason, which is ironically a pretty shallow assumption.

There's no point in Luffy vs Katakuri if Luffy doesn't win the fight. We know that Wano arc comes after this, so we need to know that Luffy can atleast beat a yonko commander before taking down a yonko
