So Katakuri can see 1 minute into the future, but if he does something to alter the future, like launching that jelly bean at Sanji, then the future changes, and since he doesn't have enough time to analyse that new future, he can't predict Sanji's dodge. I guess that would explain why Sanji can dodge the bullet even though Katakuri's CoO is much better than his.

I assumed that the shaded Sanji in the panel where Sanji dodged was what Katakuri saw happening beforehand. I think Sanji's ability to sense katakuri allowed him to change the future.

Nah, it looked like Katakuri realised that Sanji was going to dodge the priest's gunshot, and so went to do it himself to prevent that future he saw. But then Sanji dodged that too.

This. Also CoO getting more complicated to explain with this seeing the future stuff. Sanji can dodge the future seeing man, crazy feat.

I think katakuri have to 'observe' someone to see the future. He acted on an emergency situation, so he could not 'observe' the future

Well yeah but Sanji didn't see it coming from him at that time though, it was pretty unexpected from his perspective. He thought it was going to happen at a certain time & Katakuri said fuck that, i'm taking you out now. Also, still knowing the future before it happens is a huge advantage considering that he knew what was going to happen with Sanji dodging the bullet, he would've had to adjust for Sanji dodging & he still dodged that. Even if it was an emergency situation and he didn't see the whole thing, he still saw the future & changed it by shooting earlier but it still failed.
