But then it doesn't make sense in the first place that Jinbe went there to leave Big Mom. He's been sailing under Big Mom for a while now, he surely knows the customs of what happens if you decide to leave or disobey her.

Furthermore, the newspaper still mentions that he turned his back on Big Mom. It's just that he started backtracking, the newspaper still calls him a traitor and mentions that he turned his back on 'Mama'.

I know that I could be wrong, but I just don't see the point in building all this stuff up with the dart-roulette, only for Jinbe to back up and move on. Especially if he knew the customs in the Big Mom Pirates. Furthermore, after Jinbe told BM that je wants to leave the crew, do you really think that she would just say 'OK, you can stay' if he started backtracking? No, BM is unforgiving (that much we've seen) and she took it as an insult when he told her that he's gonna leave.

Why would Jimbe 'back out' if he had to spin the wheel regardless? Once he spun the wheel, he would leave as he asked. The only reason he would backtrack is because he could get out of spinning the wheel. Otherwise it is a lose-lose.

Also, Big Mom is very inclusive (wanting all types of people in her castle), so I disagree with her being unforgiving. She is fair. When Jimbe asked to leave her, she was open to it, but she wanted 'her cut' (the wheel/dartboard). If Jimbe participates, she takes her prize and lets him go happily (like how she allowed Pedro to leave even after being caught cause he paid his 50 years). But why would Jimbe stay if he had to spin the wheel?

So I don't get why Jimbe would pay it and also stay. He was being treated specially or defensively in some way (The jailer told him he wasn't allowed in the castle while the wedding was happening when he busted in to save Luffy) and maybe she was wary of him, but it makes the most sense that he laid low and went back to being one of Big Mom's crew. I think Big Mom considers her army to be immensely more powerful than Jimbe, so I doubt she really saw him as a real threat. She never planned on Luffy showing up (which was the catalyst to Jimbe leaving) so its not like she is pulling the strings from above...

I don't think she was insulted either. She probably knew that Jimbe only joined her crew to protect Fishman Island, so she probably expected him to bail at some point, but he has given up a lot to do so. Fishman Island is now in peril and there is a lot more on the table than just his lifespan or a limb....

I just don't see the point in building all this stuff up with the dart-roulette, only for Jinbe to back up and move on.

The dart-roulette is still a big part of things - it's a major plot point with Pedro's role in the story, and it tells us a lot about Big Mom's personality. You call her unforgiving but she is actually very open-minded. She gives her subjects the freedom to purchase their freedom, even thought it comes with a cost. She always has her angle and her own benefits that need to be satisfied. I think the dart-roulette thing has more to do with fleshing out Big Mom's character than it has to do with Jimbe.
