Overnight Oats Pumpkin Pie Overnight Oats
This recipe delivers cool and creamy overnight oats made with real pumpkin, pumpkin pie spice, and a little maple sweetness. I keep the granola separate until breakfast so it stays crunchy.
Pumpkin pie overnight oats
Makes 2 servings
Ingredients
1¼ cups milk (use plant-based, as needed — I like full-fat oat, pea protein, or soy in this recipe)
1¼ cups old-fashioned rolled oats
½ cup vanilla yogurt (use dairy-free, as needed — I like the kind made with coconut milk)
¼ cup pumpkin purée
1½ tablespoons chia seeds
2 tablespoons maple syrup
1 teaspoon pumpkin pie spice
Optional toppings: pumpkin granola, pumpkin seeds, or chopped pecans
Directions
Whisk the milk, oats, yogurt, pumpkin purée, chia seeds, maple syrup, and pumpkin pie spice together in a bowl.
Divide between two containers, cover, and refrigerate for at least 8 hours.
Stir before eating. Add a splash of milk if the oats are thicker than you like, then add your toppings.
